So…..about food. It can change your attitude, elevate your readiness for activity, and give balance to your day. We tend to cherish and hold in nostalgia the people, emotions, and feelings associated with our positive food experiences, and we also like to talk about our favorite foods. The memory and aroma of my grandma and my mom cooking is a foundational part of how I cook. I’ve been either seduced or repelled by the odor and taste of various foods since early childhood, and I find a comfortable reliability in that inherent measure of likability when I cook. I tend to be elementary with my combinations of ingredients, however I intently and creatively work with meats, herb blends, proteins, carbohydrates, starches, vegetables, spices, and other “tools” to form elegantly simple country food. Kitchen 326 at The Eagles Club is the essential brick and mortar continuance of my culinary research and development with craft style loaded potato bowls in my tertiary roles as Chef-Managing Partner of Big Sky Baked and Loaded and Chef-Owner of Delicious Food MT LLC. My research shows that Bozeman is indeed ready for gourmet late night bites and quality food options for vegetarians and carnivores alike. I have determined to harness the gluten free potato as a foundational ingredient for my entrees and to let handmade sauces, marinades, and craft toppings create a delicious, healthy blend of flavor, taste, and texture. Food is a simple choice that we get to make each day so I cook, eat, and serve food with integrity, love, respect, and intelligence.
